"Fermented: Umami Unleashed" Project and empowering stories for KOTO trainees

On July 11th, 2024, a sharing session on fermentation exclusively for KOTO trainees was conducted as part of the "Fermented: Umami Unleashed" event series at Complex 01. The gathering featured three prominent fermentation specialists: Mr. Jason Ignacio White – former Director of Fermentation at Noma, Mr. Daniel Hoai Tien – Founder and Master Distiller of Song Cai Distillery, and the talented Head Chef Mr.Hoang Tung from TUNG Dining. The event was also attended by over 120 eager KOTO trainees, exuding a blend of joy, excitement, and serenity.



During the event, three professionals shared insights into their culinary careers and deep-rooted fermentation passion. Jason aims to instill confidence and inner strength in every KOTO trainees through his success and failure on his journey to the culinary world. Besides, Chef Hoang Tung encouraged the trainees to step out of their comfort zones and collaborate to achieve new advancements, elevating the partnership between KOTO and TUNG Group to a new level.


Concluding the event with memorable moments, Daniel delivered an inspiring speech promoting the preservation of traditional Vietnamese values by intertwining fermentation art with the rich cultural heritage of our country.



Participating in this event reignites inspiration in KOTO’s trainees for the culinary heritage of their homeland. It serves as an endless source of motivation, propelling them towards developments in their culinary endeavors.
